John still won't eat any fruit, in any format: fresh, dried, pureed, whatever. My mother-in-law recently made a good suggestion to try to hide mashed banana in Cream of Wheat. Since I don't have bananas in the house right now, I tried apple sauce today. I thought the Cream of Wheat tasted barely sweet and thought John wouldn't even notice, but with one taste, he spit it all out, cried, and refused to eat any more. What kind of kid hates fruit? So strange.
Anyway, I realized today there is one trick I haven't tried: cooking fruit into a baked good! This could go for vegetables too. I'm imagining recipes such as zucchini bread, carrot cake, and apple sauce cookies. I'm hoping that such a recipe would still retain many vitamins and some fiber. I hope to find recipes that are lower in added sugar.
Do any of you have any favorite baked good recipes that contain fruit or vegetables? Please email me any favorite recipes. Or just suggest a recipe (e.g., "try banana bread!") and I'll look up the specifics. Thanks!

ReplyDeleteUpdate: I just baked apple sauce cookies. I used natural, no sugar-added apple sauce. I withheld the raisins because John would reject them. I withheld the nuts because I don't like them and they're not safe for John yet. Also, I added milled flaxseed for fiber and it is tasteless. Result? John LOVES the cookies! Ha ha, I'm getting him to eat some form of apple! Next time I'll try to reduce the sugar and see if they still taste good.

ReplyDeleteAlso have you tried fruit leather or fruit strips? We have made it and it isn't too difficult to make, but Target also sells really good fruit strips that are all natural/organic. Trader Joe also has some.
sweet potatoes are great, retain vites when cooked and can be baked as substitute in any pumpkin recipe (pumpkin bread). probably carrots too.

ReplyDeleteUpdate: Last night I cooked jerk tofu, black beans, and fried plantains. The fried plantains are double deep-fried and smashed, so look nothing like fruit. They are hard and crispy and taste nothing like fruit. Yet John still sensed the fruit essence and spit them out.
