Series of Smiles

Well, I'm sorry, but I simply could not choose among this series of smiling photos to publish just one or two.








What's Cookin'?
Simple Whole Roasted Chicken and Quick Black Beans and Rice (using regular brown rice, not instant). I cooked the chicken in my new deep cast iron skillet with the lid on in the oven. Doesn't that make a pretty chicken?


Chris didn't particularly love the spices called for in the recipe. Would anyone like to share with me spices they use when roasting a chicken?

  1. I rub my chicken with some olive oil then sprinkle with salt, pepper, garlic powder...comes out great! Nice golden crispy skin.

  3. It's not very gourmet, but my family really likes "Lawry's Perfect Blend Seasoning and Rub for chicken and poultry" -- with a few tsp's of butter, of course.

    My tastes are much more exotic, but I have to keep them in check :-)
