In my continued effort to sneak fruits and vegetables into baked goods for John, this morning I made sweet potato pancakes, which sounded really good. Chris swears they were "fantastic" but neither John nor I liked them. And not even my husband can deny that half of the batch was burned black and the other half looked pretty on the outside but was raw in the middle. This cooking disappointment follows a rather icky coffee cake I baked a few days ago, so I'm feeling like a dud of a homemaker right now. At least the bowl of cereal I poured myself for lunch tasted good.
John was fascinated by the tongs:
I already have tonight's dinner (Chris' dinner anyway) cooking in the slow cooker. I hope it works out better than some earlier recipes!

It's always frustrating when you slave away in the kitchen and your meal doesn't come out the way you hoped! I've certainly been there! I forgot to ask- are you and Chris going to wait to find out if the new baby is a boy or a girl? Do you have any sense one way or the other? :-)
ReplyDeleteBoy, can I relate to such frustrations. I love nothing more than to experiment in the kitchen with new recipes (and make stuff up on my own too), but sometimes it just doesn't work out.
ReplyDeleteI had a dud moment last week with a new slow cooker recipe: Moroccan Chicken with Chick Peas and Cumin. It actually tasted okay, but because it didn't turn out as I expected, it was kind of yucky. Emma took one bite, spit it out, and looked at me as if I was trying to poison her! Jason agreed with me...he thought it was okay, but not what he anticipated.
The important thing is to learn from these small defeats. I definitely know what I'll do different next time! :)

As far as sweet potato pancakes, we love them over here. I will have to dig up my recipe so you can compare. The key to properly cooked pancakes, especially with something like sweet potato inside is to use very low heat. Get your griddle nice and hot, but once you cook the first one or two you need to lower your flame. On my gas stove I have Lo, 2,3,4,5,6, and HI. I start out on 5 to heat the griddle up, cook the first one or two around 4, and lower as I cook, to eventually a 2-3 so they cook inside and out. Also, I don't know about how patient you are with the little buggers, but when I rush to turn (hungry little ones begging is sure to induce haste in flipping) I always under cook the inside. Wait as long as you can to flip and you will have a greater success.

ReplyDeleteI posted my recipe on my blog, and it turns out to be vastly different from the one you used, perhaps you would like to try with a different recipe. And, I do think cinnamon makes all the difference in the world, I think if I tried your recipe, I would add cinnamon.
