When Dinners Come Together

I love it when dinner comes together really nicely and it's wholesome, homemade, pretty, and easy! It's a rare occurrence. (There is a store-bought frozen pizza in the refrigerator right now and that will be dinner one night too.) Tonight was fun and super easy because of the wonder of previously done batch cooking.




* Homemade meatloaf (made a couple of months earlier, frozen uncooked, so tonight all I had to do was bake it for an hour from frozen)
* Frittata of eggs, cheese, collard greens (On Sunday I baked four frittatas--which are so easy to make--gave two to a new mother, took one to a parish potluck, and served this one for our own dinner on both Monday and Tuesday.)
* Beets, boiled, served with butter and salt (not as easy as dumping frozen vegetables from a bag to the pot, but nearly that easy! Just chop off the greens, boil for 30-60 minutes, take the skin off, slice, add butter and salt.)
* Caprese salad (gorgeous heirloom tomatoes, mozzarella, basil from our own vegetable patch, and homemade balsamic vinaigrette)
* White rice (leftover from last night--so John would have something to eat)
* Frozen chicken nuggets (so John would have something to eat)

An easy sneezy night of mostly heating foods, with the only real preparation being the caprese salad. Fun!
