John is slowly learning how to sit up unaided. He can sit while propped up on the couch. He can sit in slumpy fashion with the help of my Boppy pillow.
Here John leans forward purposefully to taste the letter D on the pillow.
Then John sits up purposefully to look at the letter U.
Tonight I made chicken pot au feu in the slow cooker. Beautiful!
I wish I could say I slaved over the meal, but it was so easy. I chopped some vegetables and threw them with a whole chicken (very cheap from Costco) and spices in the slow cooker. Fifteen minutes' prep time + five hours cooking time = Chris said it was fabulous. Of course, my dinner was totally different: homemade pea soup I made yesterday, spinach couscous, and a hockey puck. On Friday, it'll be me enjoying a (hopefully) delicious vegetarian slow cooker meal when I try a new recipe for enchiladas.

i created an enchilada casserole recipe. it is so good. you could even make a vegetarian version of my recipe if you wanted. it gets kind of a lot of dishes messy but you can do most of the prep ahead and then just stick it in the oven when it's time to make dinner.

It's called Vegetarian Enchilada Casserole, made in the slow cooker. Layers of corn tortillas, beans, tomatoes, corn, pepper jack cheese.
