What's Cookin'? On Saturday I baked Brioche bread which Chris turned into fabulous French toast on Sunday.
Last night I tried a new recipe as sent to me by a girlfriend: creamy chickpea curry over rice. It was heavenly! I was truly ebullient over dinner. Essentially it is onion, curry powder, Garam Masala, garlic, coconut milk, soy sauce, chickpeas, diced tomatoes, basil, sugar, salt. I served it over brown rice to be healthful, but it would taste best over white basmati rice. Also, I realize I could easily add some chicken to a portion of it for a meat-eater. John seemed to greatly enjoy the flavor and spent 10 minutes silently and contentedly putting the saucy rice in his mouth.
Speaking of John, now he "brushes" his hair if I hand him his baby hair brush, an adult hair brush, or even the lint brush. I'd like to get that on video tape because it is so cute.
Yummy, yummy! When are you going to try the brioche with chocolate like in the picture from your link? It's probably quite decadent!

Are the chick peas blended for the recipe? Dave hates chick peas,I love them, but he loves hummus so i think he just doesn't like the whole bean. I tried a vegetable curry featuring chick peas before (from joy of cooking) which I loved, but Dave wasn't too crazy about... so let me know!
ReplyDeleteWhen he "brushes" his hair does he hold the brush backwards and scrape the side or back of his head? All my kids have done that. It's a laugh.
Could you post the recipe for this, my veggie noodle of a daughter, lol, would love it. I like the idea of the chicken in it too. Thanks!

Sarah: I handed John a hair brush yesterday and he brushed his hair properly with the bristles (although was mostly brushing the back of his head). But that might have been a fluke!

ReplyDeleteSarah: The chickpeas are not blended. I, too, don't like whole chickpeas but do like hummus and in this recipe I find the chickpeas take on the spices, so I don't really taste them. Also I think that if you make the chickpeas are cooked well, their texture becomes softer and not that weird, hard, mealy texture.

ReplyDeleteCreamy Chickpea Curry
2 Tbsp. oil
1 med. onion, chopped
1 Tbsp. curry powder
2 tsp. Garam Masala (Indian spice, sold at Harry's or Whole Foods)
3 cloves crushed garlic
1 can coconut milk
2 Tbsp. soy sauce
1 can chickpeas, drained and rinsed
1 can diced tomatoes, drained and rinsed
1 cup chopped fresh basil or 2 Tbsp. dried basil (fresh is better)
1 tsp. sugar
salt to taste
**could add chicken**
Saute onion, garlic, curry, garam masala in the oil. Add coconut milk and soy sauce. Boil 5 minutes while stirring. Add remaining ingredients EXCEPT basil if using fresh (if using dry, add it in). Simmer until heated through, then add fresh basil until wilted. Salt to taste. Serve over rice (white basmati will taste best).
