What's Cookin'?
We eat meatless on Fridays, so last night I made breaded, fried, softly spiced tofu over brown rice. Even Chris, who is not a big fan of tofu, liked the tofu. Of course, it was deep fried, which makes just about anything taste good. Next time I'd add a bit more kick to the spices in the breading. I highly recommend this recipe to my vegetarian friends and for children.
I've been craving pancakes for days, so this morning I made the batter and Chris did the cooking on the griddle (I'm so bad at that part!). I wanted to try a whole grain pancake recipe, so I altered this recipe. The pancakes were really quite delicious, sweet, and light.
My recipe was:
2 c. whole milk
2 eggs
2 tsp. baking powder
1/2 tsp. salt
1-1/2 c. whole wheat flour
2 tbsp corn meal
2 tbsp wheat germ
2 tbsp flax seed meal
1/4 c. honey
1/4 c. oil
1 1/2 tsp. vanilla
1 tsp. cinnamon
In a large bowl place milk, eggs, baking powder, salt, honey, oil, vanilla and cinnamon. Mix well. Add flour and/or grains, beating only until large lumps disappear. Cook on griddle over medium-high heat (375 degrees). Turn when small bubbles appears. Remove when they stop steaming.
Lately John and I have been listening to Baby's First Animal Songs CD. Track #8 is a catchy tune, A Mouse Lived In a Windmill, about a family of mice (who wear gloves) living in a windmill in old Amsterdam. The cheerful song has been stuck in my head for days. John is just starting to appreciate music. He stands close to the CD player and points like a composer, then bounces ever so slightly but not on the beat at all. If he has the sum total of Chris' and my dancing prowess, well, let's just say charitably that he won't be a competitor on one of those innumerable dancing competition television shows.
